Description

Ingredients

one handful dandelion leaves
a few blackcurrant leaves
half a stick of rhubarb
a small lemon (sliced)
two quarts cold water
bruised root-ginger
one ounce yeast on a slice of bread
two pounds granulated sugar
one gallon boiling water


Method

Put the leaves, the lemon and the ginger in the cold water and boil for half an hour.
Strain the liquid into a large pan, add the boiling water to it and dissolve the sugar in it.
Leave to cool to blood heat and then add the yeast.
Allow to stand overnight, then strain and bottle.


A drink favoured by farmers during the hay harvest.
