Ingredients

honey combe
sugar
ground ginger
water


Method

After extracting all the honey, immerse the combs in a pan full of cold water and leave to soak for a day or two.
Strain the liquid and boil for half an hour, then dissolve the sugar in it (approximately one pound to every gallon of liquid).
When cool, pour into earthen bottles and keep for a few weeks before using.


The mead was usually prepared in early autumn so that it had time to mature before Christmas.
