Description
Ingredients
- four cupfuls plain flour
- two large teaspoonfuls baking powder
- two large teaspoonfuls ground ginger
- half a cupful sultanas
- half a cupful cherries (halved)
- a little candied peel
- four ounces butter
- two eggs
- three-quarter cupful honey
- a little salt
- a little milk
Method
- Sift the flour, the baking powder, salt and ginger into a bowl and add the dried fruit, candied peel and cherries.
- Melt the butter over a low heat and dissolve the honey into it with a little milk.
- Leave to cool and then pour, together with the beaten eggs, into the dry mixture.
- Mix thoroughly.
- Put in a greased cake tin and bake in a moderately hot oven.
- Store for a fortnight before cutting.
