Ingredients



  • salmon steak

  • salt

  • milk


Method



  • Immerse the salmon steak in boiling milk, add salt to taste and simmer gently, allowing about fifteen minutes for every pound in weight.

  • Boiling it too briskly will cause the salmon to flake in the milk.

  • When cooked, drain and slice as needed.

  • Serve warm with potatoes baked in their jackets or cold with fresh cream.
